  • ½ cup onion, thinly sliced
  • 3 garlic cloves, minced
  • ¼ teaspoon crushed red pepper
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup low-sodium vegetable or chicken broth
  • ½ cup sour cream
  • ¼ cup grated Parmesan cheese
  • 1 tablespoon unsalted butter

Instructions:

  1. Wilt the Spinach:
    • Place the chopped spinach in a large colander.
    • Bring a large pot of water to a boil.
