Ingredients
  • 4 fully cooked sausages, sliced into 1/4-inch rounds
  • 12 oz fresh green beans, trimmed
  • 1 lb potatoes, cut into 1-inch chunks (yellow or gold potatoes recommended)
  • 3 tbsp extra-virgin olive oil
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried basil
  • 1/2 tsp dried oregano
 
Instructions
  1. Heat the oven to 425°F. Line a 12" x 17" baking sheet with parchment paper.
  2. Add the green beans, potatoes, and sausage slices to the sheet pan. There’s no need to arrange them separately.
  3. Drizzle with olive oil, then season with salt, pepper, garlic powder, basil, and oregano. Toss well so everything is coated, then spread out in a single layer.
  4. Roast for 20–25 minutes, or until the potatoes are tender.
Notes
  • Any type of potato will work; gold or yellow varieties give a naturally buttery flavor.
  • Stick with 1-inch potato pieces to ensure they cook through within the listed time.
  • Green beans can be swapped for vegetables that roast at a similar speed, such as Brussels sprouts, broccoli, or carrot sticks.
