Ingredients

Chicken

  • 3 boneless, skinless chicken breasts, sliced in half horizontally (6 pieces total; about 1½ pounds)
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Mayonnaise Parmesan Topping

  • ½ cup (116 g) mayonnaise, room temperature
  • 1 cup (100 g) parmesan cheese, shredded and divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken

  1. Heat the oven to 400°F. Lightly coat a 9×13-inch baking dish or sheet pan with cooking spray.
  2. In a small bowl, stir together the salt, pepper, garlic powder, and onion powder.
  3. Season the chicken evenly on all sides with the spice mixture. Arrange the chicken in a single layer in the prepared dish.

Make the Topping

  1. In a medium bowl, mix the mayonnaise, ½ cup of the parmesan cheese, garlic powder, salt, and pepper until smooth.
  2. Spoon and spread the mayonnaise mixture evenly over the top of each piece of chicken.
  3. Sprinkle the remaining parmesan cheese evenly over the chicken.

Bake

  1. Bake for 20–22 minutes, until the chicken reaches an internal temperature of 165°F and the cheese is melted and bubbling.
  2. Garnish with chopped fresh parsley before serving, if desired.
