Cheesy Garlic Roasted Asparagus (Sheet Pan Recipe)

Ingredients:

  • 1 lb fresh asparagus, trimmed
  • 3 tbsp olive oil
  • 1 1/2 tbsp minced garlic
  • Salt and pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shredded Parmesan cheese

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. Arrange the asparagus in a single layer on a large sheet pan.
  3. In a small bowl, whisk together olive oil and minced garlic until well combined. Drizzle this mixture evenly over the asparagus, then toss gently to coat all the spears.
  4. Season with salt and freshly ground black pepper to taste.
  5. Bake for 15 minutes, or until the asparagus is tender but still crisp.
  6. Remove from the oven and sprinkle the shredded mozzarella and Parmesan cheeses evenly over the asparagus.
  7. Return the pan to the oven and bake for an additional 2 minutes, until the cheese is melted.
  8. Turn on the broiler and broil for 1-2 minutes, or until the cheese begins to bubble and turn golden brown.
  9. Serve immediately and enjoy!

Notes:

  • To snap off the woody ends of the asparagus, bend the spear near the white part, and it will break naturally.
  • Since Parmesan cheese is already salty, use more freshly ground black pepper than salt when seasoning.
  • Avoid using garlic powder; fresh minced garlic is essential for the best flavor.
