Ingredients

Honey Mustard Vinaigrette:
  • 2 cloves garlic, minced
  • 2 tablespoons champagne vinegar
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup olive oil
Christmas Salad:
  • 12 ounces fresh spring greens
  • ⅔ cup sliced almonds
  • ⅔ cup crumbled feta cheese
  • 4 seedless mandarin oranges, peeled and segmented
  • 1 pomegranate, seeded
 

Instructions:

  1. Make the Vinaigrette:
    • In a small bowl, whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt, and pepper.
    • Gradually add olive oil while whisking continuously until fully combined.
  2. Prepare the Salad:
    • In a large bowl, combine the spring greens, sliced almonds, feta cheese, mandarin orange segments, and pomegranate arils.
  3. Toss the Salad:
    • Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.
    • Season with additional salt and pepper to taste.
 

Notes

  • For the best flavor, use fresh, seedless mandarin oranges, though canned mandarins can be used in a pinch.
  • Pomegranate arils are the red seeds inside a pomegranate, filled with sweet juice surrounding a white seed. These can be bought fresh or pre-seeded at the store, especially in late fall and winter months.
  • Substitute the feta cheese with Parmesan, goat cheese, or blue cheese if preferred.
  • This salad is also delicious with a honey poppy seed dressing if you’d like to switch it up.
