Ingredients
Honey Mustard Vinaigrette:
2 cloves garlic, minced
2 tablespoons champagne vinegar
3 tablespoons honey
2 tablespoons Dijon mustard
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
¼ cup olive oil
Christmas Salad:
12 ounces fresh spring greens
⅔ cup sliced almonds
⅔ cup crumbled feta cheese
4 seedless mandarin oranges, peeled and segmented
1 pomegranate, seeded
Instructions:
Make the Vinaigrette:
In a small bowl, whisk together minced garlic, champagne vinegar, Dijon mustard, honey, salt, and pepper.
Gradually add olive oil while whisking continuously until fully combined.
Prepare the Salad:
In a large bowl, combine the spring greens, sliced almonds, feta cheese, mandarin orange segments, and pomegranate arils.
Toss the Salad:
Drizzle the vinaigrette over the salad and toss gently to coat all ingredients.
Season with additional salt and pepper to taste.
Notes
For the best flavor, use fresh, seedless mandarin oranges, though canned mandarins can be used in a pinch.
Pomegranate arils are the red seeds inside a pomegranate, filled with sweet juice surrounding a white seed. These can be bought fresh or pre-seeded at the store, especially in late fall and winter months.
Substitute the feta cheese with Parmesan, goat cheese, or blue cheese if preferred.
