4 cups sliced English cucumber (about 1½ to 2 cucumbers)
½ cup sliced red onion
1 pint grape or cherry tomatoes, sliced in half
⅓ cup sour cream
3 tablespoons mayonnaise
1 tablespoon olive oil
1 tablespoon apple cider vinegar
¾ teaspoon granulated sugar
1½ teaspoons chopped fresh dill or ½ teaspoon dried
¼ teaspoon garlic powder
¼ teaspoon kosher salt
¼ teaspoon black pepper
Instructions
Place the sliced cucumbers, red onion, and halved tomatoes into a large bowl and gently toss to combine. Set aside.
In a large measuring cup or small mixing bowl, whisk together the sour cream, mayonnaise, olive oil, apple cider vinegar, sugar, dill, garlic powder, salt, and black pepper until smooth.
Pour the dressing over the vegetables and stir carefully until everything is evenly coated. Taste and adjust seasoning with extra salt or pepper if needed.
Notes
Cucumbers may be used with the skin on or peeled, depending on preference.
If needed, substitute 2 cups of chopped or diced tomatoes for grape or cherry tomatoes.
White onion works well in place of red onion.
