Ingredients

  • 2 pounds sweet potatoes (approximately 3 medium or 2 large)
  • 4 tablespoons butter, cut into four pieces
  • 2 tablespoons heavy cream
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • Salt & freshly ground pepper to season

Instructions

  1. Start by peeling the sweet potatoes, then chop them into small, evenly sized pieces.
  2. Place the sweet potatoes in a large saucepan along with the heavy cream, butter, sugar, and salt.
  3. Cover the saucepan and cook over low heat for 35 to 45 minutes. The potatoes should be very tender and easily break apart when tested with a fork.
  4. Remove the pan from the heat and mash the mixture using a potato masher until smooth.
  5. Add salt and freshly ground pepper to taste before serving.
