Ingredients
Meatloaf
  • 2 pounds 90% lean ground turkey, or use 1 pound ground beef plus 1 pound ground turkey
  • ½ cup panko breadcrumbs
  • ¼ cup whole milk, or beef broth, plus more if needed
  • 2 large eggs, whisked
  • 2–3 Tablespoons fresh parsley, or 2 teaspoons dried parsley
  • 2 Tablespoons Worcestershire sauce
  • 2 Tablespoons ketchup
  • 1 ¼ teaspoons Kosher salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
Sauce
  • ½ cup ketchup or BBQ sauce (a half-and-half blend works great)
  • 2 Tablespoons light brown sugar
Instructions
  1. Heat the oven to 375°F. Line a baking sheet or a 9×5-inch loaf pan with foil, lightly coat with nonstick spray, and set aside.
  2. Combine the ground turkey, breadcrumbs, milk, eggs, parsley, Worcestershire sauce, ketchup, salt, pepper, garlic powder, and onion powder in a large bowl. Mix until everything is just incorporated—avoid overworking the meat.
  3. Shape the mixture into a loaf on the prepared baking sheet. Stir together the ketchup or BBQ sauce with the brown sugar, then spread the mixture over the top. Add a sprinkle of pepper if you like.
  4. Bake for 45 to 55 minutes, or until the center registers 160°F. Let the meatloaf rest for 5 to 10 minutes before slicing into 8 to 10 pieces.
Notes & Variations
  • Want to use fresh onion and garlic? Swap in ½ cup chopped onion and 4 minced garlic cloves—just sauté them briefly in olive oil first.
  • For a bit of spice, try adding red pepper flakes to the meat or mix a little chili sauce or sriracha into the topping.
  • To make the recipe gluten-free, substitute gluten-free breadcrumbs or old-fashioned oats.
  • For extra sauce lovers: prepare a second batch of the topping and either brush it on during the last 10 minutes of baking or serve it alongside the slices.
  • Choosing good-quality ground turkey will give you the best flavor and texture.
