Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (sliced lengthwise into 4 cutlets)
  • 2 tbsp extra virgin olive oil
  • 1 ½ tsp dried oregano
  • ½ tsp fine sea salt
  • ½ tsp black pepper
  • ½ tsp garlic powder

Salad Ingredients:

  • 2 cups cherry tomatoes, halved (or chopped heirloom tomatoes)
  • ½ English cucumber (or 2 garden cucumbers), sliced
  • 1 bell pepper, chopped
  • 1 avocado, chopped
  • ¼ cup red onion, thinly sliced
  • ½ cup Kalamata olives, pitted and sliced
  • 6 oz feta cheese (about 1 cup, diced)

Toppings:

  • 1 tbsp extra virgin olive oil
  • 1 lemon, cut into wedges
  • Salt and black pepper, to taste
  • 1 cup tzatziki sauce
  • 4 pita bread pieces, cut into wedges

Instructions

Prepare Ingredients

  • Make the tzatziki sauce (or use store-bought).
  • Slice and chop all salad ingredients.

Marinate the Chicken

  • In a zip-top bag or bowl, combine chicken with olive oil, oregano, salt, pepper, and garlic powder. Toss until evenly coated. For best flavor, marinate for at least 20 minutes or up to 8 hours.

Cook the Chicken

  • Preheat a grill or skillet over medium heat.
  • Cook chicken for 4-5 minutes per side, or until the internal temperature reaches 165°F.
  • Let rest for 10 minutes, then slice into bite-sized pieces.

Assemble the Bowls

  • Divide chicken and salad ingredients into four shallow bowls.
  • Drizzle with olive oil, squeeze fresh lemon juice, and season with salt and pepper.
  • Top with tzatziki sauce and serve with pita wedges.
