1/2 or 3/4 cup bread crumbs (use gluten free if needed)
3 garlic cloves
1/2 cup minced yellow onion
1 tbsp Dijon mustard

Instructions
Make the chicken patties
Add all patty ingredients to a large bowl and stir or mix by hand until everything is evenly blended.
Line a baking sheet or large cutting board with parchment paper, then form the mixture into patties and place them on the prepared surface.
Stovetop cooking option
Warm a large skillet over medium heat and drizzle in a bit of oil.
Cook the patties for 6–8 minutes per side. The exact timing depends on their thickness.
Grilling option
For chicken patties, a grill basket or perforated grill pan helps keep them intact. Lightly oil the basket before adding the patties.
Lightly coat both sides of the patties with cooking oil.
Set up the grill with a hot zone and a cooler zone, and clean the grates.
Place the basket on the grill, close the lid, and cook for 5–6 minutes.
Flip the patties gently, close the lid again, and cook another 5–6 minutes. Cooking time will vary depending on patty size.
Make the sauce
In a small bowl, combine all sauce ingredients and whisk until thoroughly smooth.
Assemble
Layer your cooked patties onto brioche buns and add whichever toppings you like.

Gluten-free option: Swap in gluten-free breadcrumbs and choose gluten-free buns or bread.
Air fryer method: Air-fry the patties in batches at 350°F for 10–12 minutes, flipping halfway through. Do not stack or crowd them. Basket liners can make cleanup easier—just be sure they’re suitable for your model.
