Ingredients:

  • 4 oz cream cheese (softened)
  • ¼ cup unsalted butter (softened)
  • 4 cups powdered sugar
  • 2 ½ cups shredded coconut
  • 1 tsp pure vanilla extract
  • 1 tbsp ground cinnamon
  • ½ cup light brown sugar

Instructions:

  1. Using a hand mixer, beat together the softened cream cheese and butter until smooth and well combined.
  2. Add the vanilla extract and mix until fully incorporated.
  3. Gradually add the powdered sugar, mixing it in until smooth and well combined.
  4. Gently fold in the shredded coconut using a rubber spatula.
  5. Cover the mixture with foil and refrigerate for 1 hour.
  6. Line a cookie sheet with parchment paper.
  7. Scoop tablespoon-sized portions of the chilled mixture and roll them into small balls.
  8. Place the balls onto the prepared cookie sheet. Continue until all the mixture is rolled into balls.
  9. In a medium-sized bowl, whisk together the brown sugar and cinnamon.
  10. Roll each ball in the cinnamon-sugar mixture until fully coated.
  11. Transfer the coated balls to a serving tray and enjoy!
