These Lemon Crumb Bars are a delicious treat with a zesty lemon filling nestled between two layers of oat crust. A perfect balance of sweet and tart, they make an irresistible dessert!
½ cup (115g) freshly squeezed lemon juice (about 3 lemons)
2 large egg yolks
1 teaspoon lemon zest
⅛ teaspoon kosher salt
Instructions
Preheat Oven & Prepare Pan: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper. Set aside.
Make the Oat Crust: In a large bowl, mix together oats, flour, brown sugar, baking soda, and baking powder. Pour the melted butter over the dry ingredients and stir until it forms a crumbly texture. Be careful not to overmix.
Reserve the Crust Mixture: Take about half of the oat mixture (roughly 2 cups) and set it aside for the topping.
Prepare the Bottom Layer: Press the remaining oat mixture into the bottom of the prepared pan, creating an even layer. Bake in the preheated oven for 12-15 minutes, or until golden brown. Remove from the oven and let it cool slightly while preparing the lemon filling.
Make the Lemon Filling: In a large bowl, combine the sweetened condensed milk, lemon juice, egg yolks, lemon zest, and kosher salt. Stir until smooth and creamy.
Assemble the Bars: Pour the lemon filling over the slightly cooled oat crust. Evenly sprinkle the reserved oat mixture on top of the lemon filling.
Bake: Bake the bars for 20-25 minutes, or until the edges are golden brown. Let them cool to room temperature, then refrigerate for at least 1 hour before serving.
