Ingredients:

  • 4 tablespoons butter
  • 1 medium yellow onion, finely chopped (about 1½ cups)
  • 1 stalk celery, finely chopped (about ½ cup)
  • 1 medium poblano pepper, stemmed, seeded, and finely chopped (about ½ cup)
  • 4 cloves garlic, minced
  • 1 tablespoon chile powder (plus extra for garnish)
  • 1 teaspoon dried oregano
  • 4 cups chicken stock
  • 3 medium Yukon Gold potatoes, peeled and cut into ½-inch pieces (about 1 lb)
  • 2 (12-ounce) bags frozen corn or 6 cups fresh corn kernels
  • 1 cup heavy cream
  • 2 teaspoons sugar
  • ½ cup crumbled cotija cheese
  • 1 tablespoon lime juice
  • Kosher salt and pepper, to taste
  • ¼ cup minced cilantro (plus extra for garnish)
  • ½ cup Mexican crema or sour cream, for garnish
  • Lime wedges, for serving
 

Instructions:

  1. Cook the Vegetables:
    • In a large pot over medium-high heat, melt the butter.
    • Add chopped onion, celery, and poblano pepper, seasoning with a pinch of salt and pepper.
    • Sauté for 7-8 minutes, stirring occasionally, until the onion becomes soft and translucent.
  2. Add Spices and Garlic:
    • Stir in the garlic, chile powder, and oregano.
    • Cook for another minute until fragrant.
  3. Simmer the Potatoes:
    • Pour in the chicken stock and add the diced potatoes.
    • Bring the mixture to a boil, then reduce the heat to a simmer.
    • Let it cook for about 15 minutes, or until the potatoes are tender.
  4. Add Corn and Cream:
    • Add the corn, heavy cream, and sugar to the pot.
    • Stir and cook for an additional 5 minutes, allowing everything to heat through.
  5. Puree Part of the Soup:
    • Transfer 1½ cups of the soup to a blender and blend until smooth.
    • Return the pureed soup to the pot and stir to combine.
  6. Season and Garnish:
    • Stir in the cotija cheese, cilantro, and lime juice.
    • Adjust the seasoning with salt and pepper to taste.
  7. Serve:
    • Ladle the soup into bowls and garnish with extra cilantro, a sprinkle of cotija cheese, a dash of chile powder, and a dollop of crema.
    • Serve with lime wedges on the side for an extra burst of flavor.
