Ingredients:
4 tablespoons butter
1 medium yellow onion, finely chopped (about 1½ cups)
1 stalk celery, finely chopped (about ½ cup)
1 medium poblano pepper, stemmed, seeded, and finely chopped (about ½ cup)
4 cloves garlic, minced
1 tablespoon chile powder (plus extra for garnish)
1 teaspoon dried oregano
4 cups chicken stock
3 medium Yukon Gold potatoes, peeled and cut into ½-inch pieces (about 1 lb)
2 (12-ounce) bags frozen corn or 6 cups fresh corn kernels
1 cup heavy cream
2 teaspoons sugar
½ cup crumbled cotija cheese
1 tablespoon lime juice
Kosher salt and pepper, to taste
¼ cup minced cilantro (plus extra for garnish)
½ cup Mexican crema or sour cream, for garnish
Lime wedges, for serving
Instructions:
Cook the Vegetables:
In a large pot over medium-high heat, melt the butter.
Add chopped onion, celery, and poblano pepper, seasoning with a pinch of salt and pepper.
Sauté for 7-8 minutes, stirring occasionally, until the onion becomes soft and translucent.
Add Spices and Garlic:
Stir in the garlic, chile powder, and oregano.
Cook for another minute until fragrant.
Simmer the Potatoes:
Pour in the chicken stock and add the diced potatoes.
Bring the mixture to a boil, then reduce the heat to a simmer.
Let it cook for about 15 minutes, or until the potatoes are tender.
Add Corn and Cream:
Add the corn, heavy cream, and sugar to the pot.
Stir and cook for an additional 5 minutes, allowing everything to heat through.
Puree Part of the Soup:
Transfer 1½ cups of the soup to a blender and blend until smooth.
Return the pureed soup to the pot and stir to combine.
Season and Garnish:
Stir in the cotija cheese, cilantro, and lime juice.
Adjust the seasoning with salt and pepper to taste.
Serve:
Ladle the soup into bowls and garnish with extra cilantro, a sprinkle of cotija cheese, a dash of chile powder, and a dollop of crema.
Serve with lime wedges on the side for an extra burst of flavor.
