Ingredients:
2 tablespoons olive oil
1 small yellow onion, diced
2 cloves garlic, minced
1 pound dried orzo pasta (about 2 1/2 cups)
2 cups low-sodium chicken or vegetable broth
2 cups whole milk
2 cups packed baby spinach, coarsely chopped
1 cup freshly grated Parmesan cheese, plus extra for serving
Kosher salt
Freshly ground black pepper
Instructions:
Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until soft and translucent, about 4-5 minutes.
Add minced garlic to the pot and sauté for another 1 minute, until fragrant.
Stir in the orzo pasta and cook for about 2 minutes to lightly toast the pasta.
Pour in the broth and milk, then bring the mixture to a simmer. Stir occasionally and let it cook until the orzo is tender and the liquid is mostly absorbed (about 8-10 minutes).
Once the orzo is cooked, stir in the chopped spinach and Parmesan cheese. Continue stirring until the spinach wilts and the cheese melts, creating a creamy sauce.
Season with kosher salt and freshly ground black pepper to taste.
