Ingredients:

  • 1 lb eggplant (cut into 1/2-inch thick slices)
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/8 tsp black pepper
  • 1/2 cup marinara sauce
  • 1 1/2 cups shredded mozzarella cheese
  • 1 tsp Italian seasoning
  • 1 oz mini pepperoni slices

 

Instructions:

  1. Preheat the oven to 450°F (232°C). Line a baking sheet with parchment paper.
  2. Arrange the eggplant slices on the prepared baking sheet in a single layer.
    • Lightly brush or spray both sides with olive oil.
    • Sprinkle with sea salt and black pepper.
  3. Bake for about 15 minutes, or until the eggplant is soft and golden.
  4. Spread 2 teaspoons of marinara sauce on each eggplant slice.
    • Top with 2 tablespoons of shredded mozzarella cheese.
    • Sprinkle with Italian seasoning and mini pepperoni slices.
  5. Set the oven to broil (or 500°F / 260°C) and broil for about 5 minutes, or until the cheese is melted and lightly browned.
