Instructions

Preparation

  1. Warm the olive oil in a large skillet over medium heat.
  2. Add the diced onion and bell pepper and cook for about 5 minutes, or until they begin to soften.

Cooking the Filling

  1. Add the breakfast sausage to the pan and cook for roughly 5 minutes, or until browned.
  2. Beat the eggs in a separate bowl, then pour them into the skillet with the sausage and vegetables.
  3. Cook, stirring now and then, until the eggs are set. Season with salt and pepper.
  4. Mix in the shredded cheddar cheese and allow it to melt.

Assembling the Burritos

  1. Warm the tortillas briefly—about 20 seconds either in a skillet or microwave.
  2. Divide the egg and sausage mixture among the tortillas, then top each one with diced avocado.
  3. Roll the tortillas tightly to form burritos.

Serving

  1. Enjoy right away with salsa and hot sauce on the side.
Notes
  • For extra heat, toss in minced jalapeños or a dash of chili powder. Prefer a meatless option? Swap the sausage for tofu or black beans.
