Ingredients:

  • 2 tablespoons butter
  • 4 cups sliced yellow squash
  • 1 medium onion, chopped
  • 2 large eggs
  • 1 cup grated cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter (for the topping)
  • ¼ teaspoon cayenne pepper (optional)
  • ½ teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 1 sleeve Ritz crackers, crushed

 

 

Instructions:

  1. Preheat the Oven: Set your oven to 350º F.
  2. Cook Squash and Onions: In a medium skillet, melt 2 tablespoons of butter over medium-low heat. Add the sliced squash and chopped onions. Cook until tender, stirring occasionally.
  3. Prepare the Casserole Base: In a large bowl, whisk together the eggs. Add the grated cheddar cheese and milk, whisking until fully combined. Once the squash and onions are cooked, add them to the egg mixture and stir until everything is well-mixed.
  4. Add Butter and Seasonings: In the same skillet used for cooking the squash, melt the remaining 2 tablespoons of butter. Add the melted butter to the casserole mixture. Stir in the cayenne pepper (if using), kosher salt, and ground black pepper. Mix well.
  5. Assemble the Casserole: Spray a 9x13-inch casserole dish with cooking spray. Pour the squash mixture into the dish. Evenly sprinkle the crushed Ritz crackers on top.
  6. Bake: Place the casserole in the preheated oven and bake for 45 minutes, or until the top is golden brown and the casserole no longer jiggles when moved.
  7. Rest and Serve: Let the casserole sit for about 3 minutes before serving.
