Ingredients:

  • 1 cup mashed strawberries
  • ¾ cup water (more if needed)
  • ¾ cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • 4 cups sliced strawberries

Directions:

  1. Prep the base: Combine the mashed strawberries and water in a saucepan. Bring to a boil and let it simmer for about 3 minutes.
  2. Extract the juice: Strain the liquid from the cooked strawberries and add enough water to make 1 cup of juice. Discard the pulp for a smooth filling.
  3. Make the sauce: In a separate saucepan, mix together the sugar, cornstarch, lemon juice, and salt. Gradually stir in the strawberry juice. Bring it to a boil over medium heat while stirring constantly, and let it thicken to a glossy finish (about 3-5 minutes).
  4. Final touches: Remove from heat and let it cool slightly before adding the fresh sliced strawberries into the sauce. Stir gently to coat them.
Serve this decadent strawberry filling in pies, atop a cheesecake, or even over a scoop of vanilla ice cream for an instant dessert upgrade!
