Line a baking sheet with foil or lightly coat it with cooking spray.
Add the ground meat, egg, dried herbs, seasonings, diced onion, and breadcrumbs to a large mixing bowl. Mix gently using your hands or a silicone spatula until evenly combined.
Shape the mixture into 2-inch meatballs and arrange them on the prepared baking sheet, leaving about 1 inch of space between each one.
Bake for 18–20 minutes, until the meatballs are browned on the outside and fully cooked through.

Lightly dampening your hands can help prevent the mixture from sticking while shaping the meatballs.
If using a dark-colored baking sheet, turn the meatballs halfway through baking to avoid over-browning on the bottoms.
