Ingredients

  • ½ cup rolled oats*
  • ½ cup unsweetened non-dairy milk
  • 1 tablespoon chia seeds
  • 2 tablespoons canned coconut milk
  • ½ tablespoon unsweetened cocoa powder
  • ½ tablespoon pure maple syrup
  • 1 tablespoon unsweetened shredded coconut (topping)
  • 1 tablespoon chopped almonds (topping)
  • 1 tablespoon dairy-free chocolate chips (optional topping, melted)

Instructions

  1. In a jar or airtight container, whisk together all ingredients except the toppings until fully combined.
  2. Seal the container and refrigerate for several hours or overnight, allowing the oats and chia seeds to soak up the liquid and thicken.
  3. Before serving, finish with shredded coconut, chopped almonds, and a drizzle of melted chocolate if desired.

Notes

  • To melt the chocolate, heat it in the microwave in 15–30 second increments, stirring between each interval until smooth.
  • Nutrition values are estimated using unsweetened almond milk and include the optional chocolate topping.
  • For a gluten-free option, be sure to use certified gluten-free oats.
