Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tbsp granulated sugar
  • 2 cups buttermilk
  • 2 large eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips (plus extra for topping if desired)

Instructions

  1. In a large bowl or a big measuring cup, mix together all the dry ingredients until evenly combined.
  2. Add the buttermilk, eggs, and vanilla extract. Stir gently until just blended—don’t worry if the batter has a few small lumps.
  3. Gently fold in the mini chocolate chips.
  4. Allow the batter to sit for 10 minutes. This step helps improve the texture, so don’t skip it.
  5. Warm a large skillet or griddle over medium-high heat.
  6. Lightly coat the surface with non-stick spray, or use butter or oil.
  7. Pour about one-third to one-half cup of batter onto the hot surface for each pancake.
  8. When bubbles begin to form on top, flip the pancakes and cook the other side until golden brown.
  9. Serve warm with butter and hot maple syrup.
