Ingredients

  • 4 very large green bell peppers (or about 5 small peppers)
  • 1 (15-ounce) can tomato sauce
  • 1/2 pound ground beef or ground turkey
  • 1/3 cup chopped onion
  • 1 cup cooked brown rice or white rice
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon garlic powder
 

Instructions

  1. Remove the tops from the bell peppers and scoop out the seeds. Place the peppers in a large saucepan, cover with water, and bring to a gentle simmer. Cook for 3 minutes, just until slightly tender. Drain, rinse with cool water, and set aside on paper towels to dry.
  2. In a skillet over medium heat, cook the ground meat with the chopped onion until fully browned and no pink remains. Drain off any excess fat.
  3. Stir the salt, black pepper, cooked rice, garlic powder, and half of the tomato sauce into the meat mixture.
  4. Spoon the filling evenly into the prepared peppers.
  5. Spoon the remaining tomato sauce over the tops of the filled peppers.
  6. Place the peppers in an ungreased baking dish and bake at 350°F for 25–30 minutes. Serve warm.
