For the Chicken

  • Chicken Breasts – You’ll need about 2½ lbs (4–5 large). Cut them into 1-inch strips for even cooking and the most tender texture.
  • Sea Salt & Black Pepper – Simple seasonings that bring out the natural flavor of the chicken.
  • All-Purpose Flour – Lightly coats the chicken to give it a golden crust when seared.
  • Olive Oil – Used to sauté the chicken and vegetables, adding flavor and helping everything brown beautifully.

For the Mushroom Mixture

  • White Mushrooms – Thickly sliced for hearty texture; they soak up all the savory sauce.
  • Onion – Finely diced for sweetness and depth of flavor.
  • Garlic – Minced and added at the end for a rich, aromatic touch.

For the Creamy Sauce

  • Butter – Forms the base of the roux for a smooth, rich sauce.
  • All-Purpose Flour – Whisked with butter to thicken the sauce without lumps.
  • Chicken Broth – Adds body and savory depth; use low-sodium if possible.
  • Lemon Juice – Brightens the sauce and balances the creamy richness.
  • Half & Half – Creates that luxurious, velvety texture; a mix of milk and cream also works.
  • Salt & Pepper – Adjust to taste for perfect seasoning.

Ingredients
For the Chicken
  • 2½ lbs chicken breasts (4–5 large), cut into 1-inch thick strips
  • 1½ tsp sea salt, plus more to taste
  • ¼ tsp black pepper, plus more to taste
  • 1 cup all-purpose flour, for coating
  • 6 Tbsp olive oil, divided
For the Mushroom Mixture
  • 1 lb white mushrooms, thickly sliced
  • 1 medium onion, finely diced
  • 3 garlic cloves, minced
For the Sauce
  • 3 Tbsp unsalted butter
  • 3 Tbsp all-purpose flour
  • 1½ cups chicken broth
  • 1 Tbsp lemon juice
  • 1 cup half and half (or ½ cup milk + ½ cup heavy cream)
  • Salt and black pepper, to taste

Instructions
  1. Prepare the Chicken:
Season the chicken with salt and pepper, then dredge both sides lightly in flour.
  2. Brown the Chicken:
Heat 3 Tbsp of olive oil in a large skillet over medium-high heat. Once hot, add the chicken in batches (don’t overcrowd). Sauté until golden brown on both sides.

Note: The chicken doesn’t need to be fully cooked—it will finish baking.
Transfer browned chicken pieces to a 13×9-inch casserole dish.
  3. Cook the Vegetables:
Wipe out the skillet, then add the remaining 3 Tbsp olive oil. Sauté the mushrooms and onions until soft and golden, about 6–8 minutes. Add garlic and cook another 1–2 minutes.
Spread the mushroom mixture evenly over the chicken in the casserole dish.
  4. Make the Sauce:
In a saucepan (or the same skillet), melt 3 Tbsp butter over medium heat. Whisk in 3 Tbsp flour and cook for 1–2 minutes, until lightly golden.
Slowly whisk in chicken broth, lemon juice, and ¼ tsp pepper. Stir until smooth and slightly thickened.
Add the half & half, bring to a gentle simmer, and season with salt and pepper to taste.
  5. Assemble and Bake:
Pour the sauce evenly over the chicken and mushrooms.
Cover the dish with foil and bake at 350°F (175°C) for 45 minutes.
  6. Serve:
Serve warm over mashed potatoes, rice, or pasta. Garnish with parsley if desired.

Notes & Tips
  • Avoid using a Dutch oven for this recipe; a casserole dish yields the best texture.
  • To make ahead: assemble the casserole, cover tightly, and refrigerate for up to 24 hours before baking.
  • This dish reheats beautifully—perfect for leftovers or meal prep.
Tips & Variations
  • Add color: Try adding sliced carrots for sweetness and color—perfect for holiday serving.
  • Gluten-free option: Substitute gluten-free all-purpose flour (results may vary slightly).
  • Healthier option: Pre-bake the chicken instead of pan-frying if avoiding fried foods.
  • Pasta variation: Best served over pasta rather than baked with it.

Chicken Gloria Casserole (Chicken and Mushroom Bake)

  1. Can I use chicken thighs instead of chicken breasts?
Absolutely! I’ve made this casserole with both, and honestly—thighs might even win. They stay extra juicy and tender. Just keep an eye on the bake time since thighs can take a touch longer if they’re thicker.

  1. Do I really need to sear the chicken first?
Short answer: yes, if you want flavor. That golden crust from searing adds depth you just can’t fake. But if you’re short on time (or patience), you can skip it—just know the sauce will be a little lighter in flavor.

  1. Can I make it lighter or dairy-free?
You sure can. Swap the half & half for a mix of milk and a splash of cream—or even evaporated milk. If you’re skipping dairy, try unsweetened oat or almond milk. The sauce won’t be quite as rich, but it’ll still be creamy and delicious.

  1. Can I make this ahead of time?
Definitely! You can assemble it up to a day ahead—just cover and chill until ready to bake. It also reheats beautifully (hello, meal prep win). Leftovers keep well for up to 3 days in the fridge.

  1. What should I serve it with?
This casserole is pure comfort food, so keep the sides simple. Think creamy mashed potatoes, buttered noodles, or a light green salad. Add a squeeze of lemon or sprinkle of fresh parsley on top if you want to brighten it up a bit.
