For Crispy Baked Chicken Thighs

  • Chicken Thighs – Bone-in, skin-on thighs work best here. The skin crisps beautifully in the oven while the dark meat stays juicy and tender.
  • Garlic Powder – Adds savory depth without overpowering the chicken.
  • Onion Powder – Helps round out the flavor and gives the seasoning a subtle sweetness.
  • Sea Salt – Enhances all of the spices and brings out the natural flavor of the chicken.
  • Black Pepper – Adds a mild heat and balances the richness of the thighs.
  • Smoked Paprika – Gives the chicken a warm, smoky flavor and helps create that beautiful golden color.
  • Turmeric – Adds earthy notes and a hint of warmth while boosting color.
  • Dried Oregano – Brings a slightly herbal, savory flavor that pairs well with chicken.
  • Dried Thyme – Adds a light, aromatic finish to the seasoning blend.
  • Olive Oil or Avocado Oil – Helps the skin crisp up in the oven and allows the seasoning to stick evenly.

Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 teaspoon garlic powder
  • 2 teaspoon onion powder
  • 1½ teaspoon sea salt
  • ¾ teaspoon freshly ground black pepper
  • 2 teaspoon smoked paprika
  • ½ teaspoon turmeric
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme
  • olive oil or avocado oil

Instructions

  1. Preheat the oven to 415°F. Line a baking dish with aluminum foil to make cleanup easier.
  2. In a small bowl or jar, mix together the garlic powder, onion powder, salt, pepper, smoked paprika, turmeric, oregano, and thyme.
  3. Gently pull the skin away from each chicken thigh, leaving it attached on one side.
  4. Arrange the thighs skin-side down in the prepared baking dish. Sprinkle generously with the seasoning mixture, making sure it coats all surfaces.
  5. Turn the thighs over. With the skin still pulled back, season the exposed meat well. Fold the skin back into place, drizzle with olive oil, and finish by seasoning the skin with the remaining spice blend.
  6. Bake for 45 minutes, until the skin is crisp and the chicken is fully cooked.
Notes
  • Make sure the chicken is completely thawed before baking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.

Crispy Juicy Oven-Roasted Chicken Thighs Recipe

  1. Do the chicken thighs need to be completely thawed?
Yes! Make sure the chicken is fully thawed before baking. This ensures the thighs cook evenly and the skin gets perfectly crispy.
  2. Can I use boneless, skinless chicken thighs instead?
You can, but bone-in, skin-on thighs give the best results. They stay juicy inside while the skin crisps beautifully. Boneless thighs will cook faster and may not get the same texture.
  3. Do I need to flip the chicken during baking?
No. Just season both sides before placing them in the oven, and they’ll crisp up nicely on their own.
  4. Can I use fresh herbs instead of dried?
Absolutely! Use about 1 tablespoon chopped fresh oregano or thyme for every ½ teaspoon dried. Sprinkle on before baking for extra flavor.
  5. What sides go best with these chicken thighs?
They pair perfectly with roasted potatoes, rice, quinoa, or steamed vegetables. A simple salad also works for a lighter, quick dinner.
