For the Sloppy Joe Filling

  • Ground Beef – I like using 85% lean beef for the best balance of flavor and juiciness. You can also swap in ground turkey or chicken if you prefer.
  • Olive Oil – Adds richness and helps the beef brown beautifully.
  • Yellow Onion – Diced small for a mild sweetness that builds the flavor base.
  • Garlic – Freshly minced garlic gives the sauce its savory depth.
  • Tomato Sauce – The base of the sauce; it creates that thick, tangy texture we love.
  • Ketchup – Adds sweetness and that signature Sloppy Joe flavor.
  • Brown Sugar – Balances out the acidity of the tomatoes with a touch of caramel sweetness.
  • Tomato Paste – Deepens the tomato flavor and thickens the sauce.
  • Worcestershire Sauce – Adds a savory, umami note that ties everything together.
  • Yellow Mustard – Brings a little zip and tang to brighten the sauce.
  • Apple Cider Vinegar – Gives a hint of acidity for perfect flavor balance.
  • Hot Sauce (optional) – Adds a subtle kick! Use your favorite brand like Texas Pete or Frank’s.
  • Kosher Salt & Black Pepper – Essential seasonings to round out the flavors.

For Serving

  • Hamburger Buns – Toasted for that crisp, buttery edge and to keep them from getting soggy.
  • Cheese (optional) – A slice of American or a little Velveeta melted right in makes them extra indulgent.

Ingredients
For the Sloppy Joes:
  • 1 Tbsp olive oil
  • 1 lb ground beef (85% lean)
  • ½ yellow onion, diced
  • 3 cloves garlic, minced
  • 8 oz can tomato sauce
  • 2 Tbsp ketchup
  • 1 Tbsp packed brown sugar
  • 1 Tbsp tomato paste
  • 1 Tbsp Worcestershire sauce
  • 2 tsp yellow mustard
  • 2 tsp apple cider vinegar
  • 2 tsp hot sauce (optional — try Texas Pete or Frank’s)
  • ½ tsp kosher salt
  • ¼ tsp black pepper
For Serving:
  • 4 hamburger buns, toasted
  • Optional: American or Velveeta cheese slices
Instructions
  1. Brown the Beef
Heat olive oil in a large nonstick skillet over high heat.
Add the ground beef (do not break it apart yet). Let it cook undisturbed for about 4 minutes, until a dark brown crust forms. Flip and let the other side brown.
  2. Cook the Aromatics
Reduce heat to medium-high. Add onions and break the beef into crumbles. Cook until beef is fully browned and onions are softened. Drain excess grease if needed.
Stir in minced garlic and cook for 1 minute.
  3. Make the Sauce
Add tomato sauce, ketchup, brown sugar, tomato paste, Worcestershire sauce, mustard, vinegar, hot sauce (if using), salt, and pepper. Stir until combined.
Simmer gently until the sauce thickens slightly — about 5 minutes. Avoid over-reducing, especially if planning to reheat later.
  4. Toast the Buns
For best results, butter the buns and toast them on a skillet or griddle until golden. This adds flavor and prevents sogginess.
  5. Serve & Enjoy
Spoon the mixture onto toasted buns. Add cheese if desired. Serve with fries, potato wedges, or coleslaw.
Slow Cooker Method
  1. Brown the beef, onion, and garlic on the stovetop as above; drain any grease.
  2. Transfer to your Crock Pot and add the remaining ingredients (except buns).
  3. Cook on Low for 2–3 hours, stirring occasionally.
  4. Serve on toasted buns with your favorite toppings.
Pro Tips
  • Add diced bell peppers or celery for extra flavor and texture.
  • Want it cheesier? Melt American or Velveeta directly into the meat mixture.

Homemade Sloppy Joes Recipe

  1. Can I use a different kind of meat?
Absolutely! Ground turkey, chicken, or even pork all work beautifully. Just keep in mind that leaner meats release less fat, so add a drizzle of olive oil when cooking to keep things juicy and flavorful.

  1. Should I drain the grease after browning the beef?
If you’re using 85% lean beef, you can leave a little fat in — it adds flavor (and who’s complaining?). But if your beef is fattier, go ahead and drain off the excess before adding the sauce ingredients. Nobody likes oily Sloppy Joes!

  1. How do I stop the buns from going soggy?
Toast ‘em! A quick brush of butter and a minute on a hot skillet or griddle gives them a golden edge and keeps the sauce from soaking through. Bonus: they taste way better too.

  1. Can I make the filling ahead of time?
Yes — and it actually tastes even better the next day. Store it in the fridge for up to 3 days or freeze for a few months. Just reheat gently on the stove and you’re ready for Sloppy Joe night on demand.

  1. My sauce came out too sweet (or too tangy). How do I fix it?
Easy fix! If it’s too sweet, stir in a splash of apple cider vinegar or a bit of mustard to balance it out. If it’s too tangy, add a touch more brown sugar or ketchup. Taste as you go — that’s the secret to Sloppy Joe magic.
