Homemade Sloppy Joes

For the Sauce

  • Tomato Sauce – The base of your Sloppy Joe mixture; rich and hearty with just the right amount of tomato flavor.
  • Ketchup – Adds sweetness, tang, and depth; it’s the secret to that classic Sloppy Joe taste.
  • Worcestershire Sauce – Brings savory umami notes that make the sauce irresistible.
  • Yellow Mustard – Adds a zesty punch that balances the sweetness of the sauce.
  • Brown Sugar – A touch of sweetness that rounds out the acidity; adjust to taste depending on your ketchup.

For the Sloppy Joes

  • Olive Oil – Helps brown the beef evenly and adds a subtle richness.
  • Ground Beef – The star of the dish! Use 85–90% lean for the perfect balance of flavor and texture.
  • Sea Salt & Black Pepper – Essential for seasoning the beef and bringing all the flavors together.
  • Onion – Finely chopped for sweetness and depth.
  • Green Bell Pepper – Adds color and a mild crunch. You can swap it for grated carrot for a slightly sweeter twist.
  • Garlic – Infuses the sauce with rich aroma and savory flavor.
  • Hamburger Buns – Soft and toasted (if you like), ready to soak up all that saucy goodness.

Ingredients

For the Sauce

  • 1 (15 oz) can tomato sauce
  • ¼ cup ketchup*
  • 1 Tbsp Worcestershire sauce
  • 1½ tsp yellow mustard (or to taste)
  • 2–3 tsp brown sugar (or to taste)*

For the Sloppy Joes

  • 1 Tbsp light olive oil (or any high-heat oil)
  • 1 lb lean ground beef (85–90% lean)
  • ½ tsp fine sea salt (or to taste)
  • ¼ tsp freshly ground black pepper (or to taste)
  • 1 small onion, finely chopped
  • ½ small green bell pepper, finely diced (or substitute ½ cup grated carrot)
  • 3 garlic cloves, minced
  • 5 hamburger buns, toasted if desired
Instructions
  1. Make the Sauce
In a medium bowl, whisk together tomato sauce, ketchup, Worcestershire sauce, mustard, and brown sugar. Set aside.
  2. Cook the Beef
Heat oil in a large skillet or Dutch oven over medium-high heat.
Add ground beef and cook for about 5 minutes, breaking it apart with a spatula, until browned and cooked through.
Drain excess fat if necessary, then season with salt and pepper.
  3. Add the Vegetables
Stir in onion and bell pepper. Cook for 5 minutes, until softened.
Add garlic and cook 30 seconds more, until fragrant.
  4. Combine & Simmer
Pour in the prepared sauce and bring to a light boil.
Reduce heat to low and simmer uncovered for 10–15 minutes, or until thickened to your liking.
Taste and adjust seasonings as needed — add a splash of water for a looser consistency if desired.
  5. Serve
Spoon the mixture onto toasted hamburger buns and serve warm with pickles and chips.

Tasting & Adjustment Guide

  • Too sweet? Add a pinch of salt or ½ tsp apple cider vinegar
  • Too tangy? Add ½ tsp brown sugar or a drizzle of ketchup
  • Too tomato-forward? Simmer 5 extra minutes to deepen flavor
  • Missing depth? Add a bit more Worcestershire sauce
  • Too loose? Simmer uncovered 3–5 minutes longer
  • Too thick? Add a splash of water

Notes
  • Why ketchup? Adds brightness, acidity, and a touch of sweetness that enhances the sauce.
  • Adjust sweetness: Start with 2 tsp brown sugar and increase to taste depending on your ketchup.

Homemade Sloppy Joes

  1. Can I use a different kind of meat?
Absolutely! This recipe works beautifully with ground turkey, chicken, or even pork. If you’re using leaner meat (like turkey), add a touch more seasoning or brown sugar to keep that signature Sloppy Joe richness.

  1. How do I fix the sauce if it’s too runny or too thick?
Easy fix. If it’s too loose, just let it simmer uncovered for a few extra minutes until it thickens up. Too thick? Stir in a splash of water or broth until it’s just the right saucy consistency.

  1. Can I make it ahead or freeze it?
Yes! The meat mixture actually gets even better the next day. Store it in the fridge for up to 3 days or freeze for up to 3 months. Reheat gently on the stove, adding a little water if needed to loosen the sauce.

  1. Do I need to drain the beef?
If you’re using lean beef (85–90%), you can usually skip draining — the little bit of fat adds great flavor. But if your beef is fattier, go ahead and drain off the excess so your sauce doesn’t end up greasy.

  1. How can I tweak the flavor if it tastes off?
    You’ve got options!
  • Too sweet? Add a pinch of salt or ½ tsp apple cider vinegar.
  • Too tangy? A drizzle of ketchup or ½ tsp brown sugar will mellow it out.
  • Too tomato-y? Simmer a few minutes longer to deepen the flavor.
Taste as you go — that’s how you make your perfect Sloppy Joe!
