For Marry Me Chicken

  • Chicken Breasts – Use 3 to 4 boneless, skinless chicken breasts (about 1½ pounds total). You can also use chicken thighs if you prefer darker meat.
  • Olive Oil – For searing the chicken and giving it that beautiful golden crust.
  • Salt & Black Pepper – Simple seasoning that brings out the flavor of the chicken.
  • Garlic – Three cloves, minced. Garlic adds depth and aroma to the sauce.
  • Dried Thyme & Oregano – These herbs infuse the cream sauce with warm, earthy flavor.
  • Red Pepper Flakes – For a gentle kick of heat that balances the richness.
  • Low-Sodium Chicken Broth – Forms the base of the sauce without making it too salty.
  • Heavy Cream – Adds richness and makes the sauce irresistibly smooth and velvety.
  • Sun-Dried Tomatoes – Chopped finely; their tangy sweetness cuts through the cream beautifully. (Skip them if you’re not a tomato fan!)
  • Parmesan Cheese – Freshly grated for the best flavor and a creamy finish.

Ingredients

  • 1 tablespoon olive oil
  • 3–4 chicken breasts (about 1½ lbs total)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • ¾ cup low-sodium chicken broth
  • ½ cup heavy cream
  • ½ cup sun-dried tomatoes, chopped (optional if you don’t like tomatoes)
  • ¼ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat oil in a large cast-iron (or oven-safe) skillet over medium heat.
  3. Season the chicken on both sides with salt and pepper.
  4. Sear the chicken for about 5 minutes per side, until golden brown. Transfer to a plate and set aside.
  5. Make the sauce: In the same skillet, sauté the minced garlic for 1 minute. Add thyme, oregano, and red pepper flakes. Pour in the chicken broth and heavy cream, then cook for 5 minutes, stirring often.
  6. Add the flavor: Stir in the sun-dried tomatoes and Parmesan cheese until well combined.
  7. Finish in the oven: Return the chicken to the skillet, spoon the sauce over the top, and bake for 18–20 minutes or until the chicken is cooked through.
  8. Serve warm with your favorite low-carb sides.

Tips & Notes

  • Use a cast-iron or oven-safe skillet so you can easily transfer it from stovetop to oven. Test if it’s hot enough by sprinkling a drop of water — it should sizzle immediately.
  • Measure out all ingredients beforehand to keep cooking smooth and mess-free.
  • You can keep the chicken breasts whole or slice them into cutlets for faster cooking.
  • Freshly grated Parmesan makes all the difference in flavor — use a box or handheld grater.
  • If your sun-dried tomatoes are packed in oil, add a little of that oil to the pan for extra depth of flavor.

  1. Can I use chicken thighs instead of chicken breasts?
Absolutely! Boneless, skinless chicken thighs work just as well and tend to stay even juicier. You might need to cook them a touch longer, but they’re packed with flavor. If you love dark meat, this one’s for you.
  2. My sauce turned out a bit thin — how do I fix it?
No worries! Just let it simmer for a few extra minutes to reduce and thicken naturally. If you’re in a hurry, whisk together a teaspoon of cornstarch with a splash of water, then stir it in. The sauce will turn silky and rich in no time.
  3. I’m not a fan of sun-dried tomatoes. Can I skip them?
You sure can. They add a lovely tangy sweetness, but the dish still tastes amazing without them. Try adding a small squeeze of lemon juice or an extra pinch of herbs if you want to balance out the richness.
  4. How do I make sure my chicken stays juicy?
Two tricks: don’t overcook it, and let the sauce do the work. Sear the chicken until golden, then finish it gently in the creamy sauce. A meat thermometer is your best friend here — aim for 165°F (74°C) in the thickest part.
  5. Can I make it ahead or store leftovers?
Definitely! Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to loosen the sauce. I wouldn’t recommend freezing — creamy sauces tend to split once thawed.
