For the Pancakes

  • All-Purpose Flour – forms the base of the batter and gives the pancakes their structure.
  • Baking Powder – helps the pancakes rise and become light and fluffy.
  • White Sugar – adds a subtle sweetness to balance the flavors.
  • Salt – enhances the overall taste and keeps the pancakes from tasting flat.
  • Milk – brings everything together into a smooth, pourable batter.
  • Butter (melted) – adds richness and helps create a soft texture.
  • Egg – binds the ingredients and contributes to the fluffy consistency.
  • Vanilla Extract – adds a warm, comforting flavor that makes the pancakes taste homemade and cozy.

Ingredients

  • 1 ¼ cup all-purpose flour
  • 2 teaspoon baking powder
  • 2 tablespoon white sugar
  • ⅛ tsp salt
  • 1 cup milk
  • 2 tablespoon butter, melted
  • 1 egg
  • ¼ teaspoon vanilla extract

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar. Add the milk, melted butter, egg, and vanilla extract, then mix until everything is evenly combined.
  2. Place a nonstick skillet over medium heat. Pour about ⅓ cup of batter into the center of the pan. Cook until bubbles form on the surface and the edges turn golden. Flip and cook for another minute, or until the other side is golden as well. Continue with the remaining batter.
  3. To keep pancakes warm while you finish cooking, transfer them to a plate and cover with a towel.
  4. Serve warm with butter, syrup, and fresh fruit of your choice.

Notes
  • For evenly browned pancakes, avoid greasing the pan if your skillet is truly nonstick.
  • If your pan tends to stick, lightly oil it before cooking.

Simple Fluffy Pancakes (Made from Scratch)

  1. Why aren’t my pancakes fluffy?
If your pancakes are coming out flat, it’s usually because the batter was mixed a bit too much or your baking powder is past its prime. You only need to stir until everything is just combined—lumps are completely fine here!
  2. Should I rest the batter before cooking?
You can, and it does make a difference. Even letting the batter sit for 5 minutes helps it thicken slightly, which gives you softer, fluffier pancakes.
  3. When’s the right time to flip the pancakes?
Once you see bubbles forming on the surface and the edges look set, they’re ready to flip. If you try too early, they can fall apart.
  4. Why are my pancakes browning too quickly?
That’s usually a sign your heat is too high. Pancakes do best over medium heat so they cook through evenly.
  5. Do I need to grease the pan?
If you’re using a good nonstick pan, you might not need to. But if your pancakes tend to stick, just add a light layer of oil or butter.
