For Spinach Stuffed Chicken

  • Chicken Breasts – Boneless, skinless chicken breasts work best for this recipe. Make sure they’re thick enough to cut a pocket into for stuffing.
  • Olive Oil or Avocado Oil – Used to coat the chicken and help the seasoning stick.
  • Paprika – Adds warmth and color to the chicken.
  • Salt – Divided between seasoning the chicken and flavoring the filling.
  • Garlic Powder & Onion Powder – Simple pantry spices that boost flavor without overpowering.

For the Spinach Filling

  • Cream Cheese – Softened so it mixes easily and creates a creamy, rich texture.
  • Grated Parmesan – Adds a nutty, salty depth to the filling.
  • Mayonnaise – Helps bind everything together and makes the filling extra smooth.
  • Fresh Spinach – Chopped and stirred into the mixture for a fresh, vibrant bite.
  • Minced Garlic – Adds bold flavor and aroma to the filling.
  • Red Pepper Flakes – Just a pinch for a little kick of heat.

Spinach Stuffed Chicken Breasts

  1. Can I use frozen spinach instead of fresh?
Totally! Just thaw it first and give it a really good squeeze to get rid of all the water (seriously—squeeze like your dinner depends on it!). No one wants soggy filling!
  2. Help! My filling leaks out while baking. What do I do?
Ah yes, the runaway filling. To stop that:
  • Don’t slice too deep—just a nice little pocket.
  • Don’t overstuff (I know it’s tempting!).
  • And if you want to go pro, use toothpicks to seal the edges. They’re like little bouncers keeping everything in.
  1. Can I switch up the cheese?
Yes! Mozzarella, feta, even goat cheese can work here. Just pick something that melts well and makes your tastebuds happy. Parmesan gives that salty kick, but feel free to play around!
  2. Do I need to sear the chicken before baking?
You don’t have to… but if you’ve got an extra 5 minutes, do it! That golden crust = flavor boost. Just a quick sear before popping it into the oven makes it look and taste extra special.
  3. Can I prep this ahead of time?
Yep! You can stuff the chicken up to a day ahead. Just wrap it up and refrigerate. When you’re ready to bake, let it sit out for 15 mins (so it doesn’t go into the oven fridge-cold), then cook as normal. Easy peasy.
