 Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons mayonnaise
  • 1½ cups fresh spinach, chopped
  • 1 teaspoon minced garlic
  • ½ teaspoon red pepper flakes

 

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the chicken:
    • Place the chicken breasts on a cutting board and drizzle with oil.
    • In a small bowl, mix paprika, garlic powder, onion powder, and ½ teaspoon salt.
    • Sprinkle the seasoning mixture evenly over both sides of the chicken.
    • Using a sharp knife, carefully slice a pocket into the side of each breast. Set aside.
  3. Make the filling:
    • In a mixing bowl, combine the cream cheese, Parmesan, mayonnaise, chopped spinach, minced garlic, red pepper flakes, and the remaining ½ teaspoon salt. Mix until well combined.
  4. Stuff the chicken:
    • Spoon the spinach mixture into the pockets of each chicken breast, dividing it evenly.
  5. Bake:
    • Place the stuffed chicken breasts in a 9×13-inch baking dish.
    • Bake uncovered for 25–30 minutes, or until the chicken is cooked through and juices run clear.
