  • Steak Fajita Meat – Skirt steak, flank steak, tri-tip, or sirloin all work well here. These cuts absorb the marinade beautifully and grill up juicy and tender.
  • Pineapple Juice – This is the key ingredient. Pineapple juice naturally tenderizes the meat while adding a subtle sweetness that helps create a flavorful, caramelized crust on the grill.
  • Low Sodium Soy Sauce – Adds savory depth and saltiness without overpowering the marinade. Using low sodium keeps the flavors balanced.
  • Lime Juice – Fresh lime juice brightens everything up and balances the sweetness of the pineapple juice.
  • Garlic – Pressed or smashed garlic infuses the marinade with bold, classic fajita flavor.

Ingredients

  • 2 cans pineapple juice (2 cups total)
  • 1 (15 oz.) bottle low sodium soy sauce
  • 3 limes, juiced
  • 5 garlic cloves, pressed or smashed
  • 3 tablespoons fresh cilantro, finely chopped (optional, for garnish)
  • 2–4 lbs. steak fajita meat such as skirt steak, flank steak, tri-tip, sirloin, etc.
 

Instructions

  1. Arrange the fajita meat in a glass casserole dish that has a lid.
  2. Add the pineapple juice, soy sauce, freshly squeezed lime juice, and garlic directly over the meat. Use tongs to mix and turn the steak until it is evenly coated. If using cilantro, sprinkle it over the top.
  3. Cover and refrigerate for at least 8 hours, or up to 2–3 days for deeper flavor. Grill over a charcoal grill if available. Refer to the grilling instructions for full details on cooking and serving the steak fajitas.

    Absolutely! Skirt steak, flank steak, tri-tip, or sirloin all work well. Thinner cuts will absorb the marinade faster, while thicker cuts need a bit more time.

 

  1. Do I have to use pineapple juice?
    Pineapple juice really helps tenderize the meat naturally. If you don’t have any, orange juice can work as a substitute, but the texture and flavor won’t be quite the same.

 

  1. Can I cook this indoors?
    Yes! While charcoal grilling gives the best flavor, a gas grill, grill pan, or cast-iron skillet will do the job. Just make sure it’s hot so you get that perfect sear.

 

  1. Should I add extra salt to the marinade?
    Nope! The soy sauce gives plenty of saltiness. Taste it first, and only adjust if needed. Most people find it perfectly balanced as is.
