Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon paprika
  • 1 teaspoon salt, divided
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 4 ounces cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tablespoons mayonnaise
  • 1 ½ cups chopped fresh spinach
  • 1 teaspoon minced garlic
  • ½ teaspoon red pepper flakes

Instructions

  1. Heat the oven to 375°F.
  2. Set the chicken breasts on a cutting board and lightly coat them with the oil.
  3. In a small bowl, mix the paprika, ½ teaspoon of the salt, garlic powder, and onion powder. Season both sides of the chicken with this blend.
  4. With a sharp knife, create a pocket in the side of each chicken breast. Set aside.
  5. In another bowl, combine the cream cheese, Parmesan, mayonnaise, spinach, garlic, red pepper flakes, and the remaining ½ teaspoon salt until the mixture is smooth and evenly blended.
  6. Fill each chicken pocket with the spinach mixture.
  7. Arrange the stuffed chicken breasts in a 9×13-inch baking dish. Bake uncovered for 25–30 minutes, or until the chicken reaches a safe internal temperature and is fully cooked.
