  • 3 lbs chicken breasts, (boneless, skinless)
  • 1 1/2 cups BBQ sauce (Sweet Baby Ray’s Honey BBQ was used here)
  • 1/2 medium onion, grated (including the juices)
  • 1 Tbsp olive oil
  • 1 Tbsp Worcestershire sauce
  • 2 Tbsp brown sugar
Instructions
  1. In a 5–6 quart slow cooker, combine all the sauce components and mix well.
  2. Add the chicken breasts, turning them so they’re fully coated. Cover the slow cooker and cook on high for 2–3 hours or on low for 6–7 hours. If you’re working with smaller pieces of chicken, a reduced quantity, or a slow cooker that heats aggressively, start checking earlier. The chicken is ready when it reaches an internal temperature of 165°F and comes apart easily.
  3. Transfer the cooked chicken to a cutting board. Using two forks, shred the meat, then return it to the slow cooker. Stir so the chicken absorbs the sauce.

When it hits 165°F and practically falls apart the moment you poke it with a fork. If you’re fighting with it, it’s not done. Give it a little more time and let the slow cooker do its thing!

  1. Can I swap chicken breasts for thighs?

Absolutely. Thighs are juicier and a bit more forgiving if you forget about the slow cooker (we’ve all been there). Use whichever you love—both work perfectly in this recipe.

  1. My sauce seems a bit thin—how do I fix it?
