For Tuna Stuffed Avocados

  • Avocados – Use 4 ripe avocados. They should be creamy and easy to scoop out for stuffing.
  • Canned Tuna – I recommend 2 (5-ounce) cans of albacore tuna, drained.
  • Mayonnaise – 1/4 cup for a creamy texture. You can use Greek yogurt for a lighter alternative.
  • Celery – 1 stalk, diced, for crunch and freshness.
  • Red Onion – 2 tbsp, diced, for a touch of sharpness.
  • Herbs – 1-2 tbsp of chopped parsley, chives, or your favorite fresh herbs to add flavor.
  • Dijon Mustard – 1/2 tbsp for a tangy kick.
  • Salt & Pepper – To taste, adjust for seasoning.

Ingredients

  • 4 ripe avocados
  • 2 (5-ounce) cans of tuna (preferably albacore tuna)
  • 1/4 cup mayonnaise
  • 1 stalk celery, diced
  • 2 tbsp red onion, diced
  • 1-2 tbsp fresh herbs (parsley, chives, etc.), chopped
  • 1/2 tbsp Dijon mustard
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Tuna Salad:
    • In a mixing bowl, combine the tuna, mayonnaise, diced celery, red onion, herbs, Dijon mustard, salt, and pepper.
    • Stir until all ingredients are well incorporated.
  2. Stuff the Avocados:
    • Cut the avocados in half and remove the pits.
    • Spoon generous amounts of tuna salad into each avocado half.

Tips

  • You can prepare the tuna salad ahead of time. It will keep in the fridge for 3-4 days, so you can assemble the avocados as needed for a quick lunch.
  • If serving to a group, squeeze some fresh lemon juice on the avocado halves and rub it in to help prevent browning and keep them looking fresh.

Tuna Stuffed Avocados

1. Can I make the tuna salad in advance?

Yes! You can easily make the tuna salad ahead of time and store it in an airtight container in the fridge for up to 3-4 days. Just scoop the salad into the avocado halves when you’re ready to serve!

2. What’s the best type of tuna to use?

I recommend using albacore tuna for the best flavor and texture. It’s lighter and flakier, but any canned tuna will work—just make sure to drain it well before mixing it with the other ingredients!

3. Can I substitute mayonnaise for something lighter?

Absolutely! You can swap out the mayonnaise for Greek yogurt if you want a healthier, tangier option. It’ll still be creamy but with a bit of extra protein.

4. How can I keep the avocado from browning?

To prevent browning, squeeze a little lemon or lime juice on the cut avocado halves before adding the tuna mixture. It’ll keep the avocados fresh and vibrant!

5. Can I use other herbs besides parsley?

Of course! Chives, cilantro, or dill work great, too. Feel free to mix it up based on what you have on hand or your personal flavor preferences.
