Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 cup uncooked long-grain white rice
  • 1 ½ cups water
  • 1 packet (1 oz) dry onion soup mix (or homemade)
  • 1 can (10.5 oz) condensed cream of mushroom soup
Instructions
  1. Preheat your oven to 325°F (165°C).
  2. Prepare the dish: Lightly spray a 9×13-inch glass casserole dish with cooking spray.
  3. Layer the ingredients:
    • Place chicken breasts in the dish and season lightly with salt and pepper.
    • Sprinkle the uncooked rice evenly over the chicken.
    • Add the dry onion soup mix over the top.
  4. Mix the sauce: In a separate bowl, whisk together the cream of mushroom soup and 1 ½ cups of water. Pour the mixture evenly over the chicken and rice.
  5. Bake: Cover tightly with foil and bake for 1 hour 15 minutes, or until the rice is tender and the chicken is cooked through.
If needed, bake for up to an additional 20–25 minutes depending on your oven and pan.

  • Try swapping cream of mushroom for cream of chicken or cream of celery for a different twist.
  • For extra flavor, stir a handful of frozen peas or sliced mushrooms into the rice mixture before baking.
