Ingredients

For the Dressing:
  • 3/4 cup plain Greek yogurt (Fage is recommended for thickness)
  • 1/4 cup mayonnaise
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • Salt and freshly ground black pepper to taste
For the Slaw:
  • 1 small cabbage, shredded (about 6-7 cups or 16 oz)
  • 1 1/2 cups matchstick carrots
  • 2 large Gala apples, cut into matchsticks (about 3 cups)
  • 1/2 cup sliced green onions
  • 3/4 cup sliced almonds
  • 3/4 cup dried cranberries
  • 3/4 cup crumbled feta cheese, blue cheese, or shredded sharp cheddar (optional)
 

Instructions:

  1. Make the Dressing:
    • In a mixing bowl, whisk together Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth.
    • Season with salt and pepper to taste.
  2. Prepare the Slaw:
    • In a large bowl, combine shredded cabbage, matchstick carrots, apple slices, green onions, sliced almonds, and dried cranberries.
    • Add cheese if desired.
  3. Toss the Slaw:
    • Pour the dressing over the slaw mixture and toss everything together until evenly coated.
    • For the best flavor and texture, serve within a few hours of preparing.
 

Notes

  • You can use whole, low-fat, or fat-free Greek yogurt for this recipe, depending on your preference.
  • This recipe makes about 10 cups.
