For the Dressing:
3/4 cup plain Greek yogurt (Fage is recommended for thickness)
1/4 cup mayonnaise
1/4 cup honey
2 tablespoons apple cider vinegar
Salt and freshly ground black pepper to taste
For the Slaw:
1 small cabbage, shredded (about 6-7 cups or 16 oz)
1 1/2 cups matchstick carrots
2 large Gala apples, cut into matchsticks (about 3 cups)
1/2 cup sliced green onions
3/4 cup sliced almonds
3/4 cup dried cranberries
3/4 cup crumbled feta cheese, blue cheese, or shredded sharp cheddar (optional)
Instructions:
Make the Dressing:
In a mixing bowl, whisk together Greek yogurt, mayonnaise, honey, and apple cider vinegar until smooth.
Season with salt and pepper to taste.
Prepare the Slaw:
In a large bowl, combine shredded cabbage, matchstick carrots, apple slices, green onions, sliced almonds, and dried cranberries.
Add cheese if desired.
Toss the Slaw:
Pour the dressing over the slaw mixture and toss everything together until evenly coated.
For the best flavor and texture, serve within a few hours of preparing.
Notes
You can use whole, low-fat, or fat-free Greek yogurt for this recipe, depending on your preference.
This recipe makes about 10 cups.
