Ingredients:

  • 1.5 lbs cod fillets
  • 1/4 cup avocado oil
  • 1 tsp lime zest
  • 2 Tbsp lime juice
  • 1 large garlic clove, minced
  • 1 1/2 tsp chili powder
  • 1 tsp ground paprika
  • 1 1/2 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/2 tsp sea salt
 

Instructions:

  1. Prepare the Marinade:
    • In a mixing bowl or measuring cup, combine all marinade ingredients and stir until well blended.
  2. Marinate the Cod:
    • Place the cod fillets into a resealable bag or container.
    • Pour the marinade over the fish, seal the bag (or container), and gently toss to ensure the fish is evenly coated.
    • Refrigerate for at least 30 minutes, or up to 10 hours for maximum flavor.
  3. Preheat the Oven:
    • Preheat the oven to 400°F (200°C).
  4. Bake the Cod:
    • Transfer the marinated cod fillets into a large casserole dish, along with the marinade.
    • Place the dish in the oven, positioning it on the rack that’s second from the top.
    • Bake for 15 minutes or until the fish is cooked through and flaky.
  5. Serve:
    • Serve with your favorite sides, like roasted asparagus and cauliflower rice for a low-carb option, or try Lemon Garlic Rosemary Rice for a tasty pairing.
