Ingredients:

  • 1 lb Roma tomatoes
  • 1 English cucumber
  • 1/2 medium red onion, thinly slice
  • 2 ripe avocados, diced
  • 2 Tbsp extra virgin olive oil (or sunflower oil)
  • 2 Tbsp fresh lemon juice (from 1 medium lemon)
  • 1/4 cup (about 1/2 bunch) fresh cilantro, chopped
  • 1 tsp sea salt (or 3/4 tsp table salt)
  • 1/8 tsp black pepper

Instructions:

  1. In a large salad bowl, combine the chopped tomatoes, sliced cucumber, sliced red onion, diced avocado, and chopped cilantro.
  2. Drizzle with the olive oil and lemon juice. Gently toss to mix everything together.
  3. Just before serving, sprinkle the salt and pepper over the salad and toss again to combine.

 

Notes:

  • If you're not a fan of cilantro, you can swap it out for fresh dill for a different flavor.
