This Irish soda bread is wonderfully simple to make with just a few basic ingredients: flour, baking soda, buttermilk, and butter. The buttermilk gives it a rich flavor and a nice crust, making it a perfect addition to your table any time of the year
Preheat your oven to 375°F (190°C). Lightly grease a large baking sheet.
In a large bowl, combine flour, softened butter, sugar, baking soda, baking powder, and salt. Stir in the buttermilk and egg until well combined.
Turn the dough out onto a lightly floured surface and knead it a few times to bring it together. Shape the dough into a round loaf and place it on the prepared baking sheet. The dough will be slightly sticky.
In a small bowl, mix the melted butter with ¼ cup buttermilk. Brush the top of the loaf with this mixture.
Using a sharp knife, cut an ‘X’ shape into the top of the loaf.
Bake for 45 to 50 minutes or until a toothpick inserted into the center of the loaf comes out clean. You can brush the loaf with the butter-buttermilk mixture every 15 minutes while baking for extra flavor and shine.
Allow the bread to cool slightly before slicing. Enjoy!

How to Store: Once cooled, wrap the soda bread tightly in plastic wrap or place it in an airtight container. Store it at room temperature for up to four days.
Freezing: For longer storage, wrap the cooled loaf in plastic wrap, then aluminum foil. Freeze for up to two months. Thaw in the refrigerator overnight before serving.
