Ingredients:
6-7 organic tomatoes, chopped
1 1/2 cucumbers, chopped
1 hot red pepper (seeds left in for extra spice)
1 stalk green onion, finely chopped
1/3 to 1/2 cup chopped cilantro or parsley (or a mix of both)
1/4 to 1/3 cup fresh lemon juice
1/2 tsp sea salt
Instructions:
Chop the Vegetables and Herbs:
Chop the tomatoes, cucumbers, red pepper, green onion, and herbs.
Combine the Ingredients:
In a large bowl, combine the chopped ingredients.
Add Lemon Juice and Seasoning:
Add the fresh lemon juice and sea salt.
Stir everything together.
Taste and Adjust:
Taste and adjust seasoning with more lemon juice or sea salt as desired.
