Ingredients:

  • 6-7 organic tomatoes, chopped
  • 1 1/2 cucumbers, chopped
  • 1 hot red pepper (seeds left in for extra spice)
  • 1 stalk green onion, finely chopped
  • 1/3 to 1/2 cup chopped cilantro or parsley (or a mix of both)
  • 1/4 to 1/3 cup fresh lemon juice
  • 1/2 tsp sea salt
 

Instructions:

  1. Chop the Vegetables and Herbs:
    • Chop the tomatoes, cucumbers, red pepper, green onion, and herbs.
  2. Combine the Ingredients:
    • In a large bowl, combine the chopped ingredients.
  3. Add Lemon Juice and Seasoning:
    • Add the fresh lemon juice and sea salt.
    • Stir everything together.
  4. Taste and Adjust:
    • Taste and adjust seasoning with more lemon juice or sea salt as desired.
  5. Serve:
    • Serve immediately and enjoy!
