Ingredients:

  • 1 tablespoon vegetable oil (divided)
  • 1 red bell pepper, cored, seeded, and sliced into strips
  • 1 green bell pepper, cored, seeded, and sliced into strips
  • 1 1/4 pounds flank steak, thinly sliced
  • 2 teaspoons minced garlic
  • 1 teaspoon minced ginger
  • Salt and pepper, to taste
  • 1/4 cup soy sauce
  • 1 1/2 tablespoons sugar
  • 1 1/2 tablespoons cornstarch
 

Instructions:

  1. Sauté the Peppers:
    • In a large pan, heat 1 teaspoon of vegetable oil over medium-high heat.
    • Add the sliced red and green bell peppers.
    • Sauté for 3-4 minutes until the peppers are slightly tender.
    • Transfer the peppers to a plate and set aside.
  2. Cook the Steak:
    • Add the remaining teaspoon of oil to the same pan.
    • Season the sliced flank steak with salt and pepper to taste, then increase the heat to high.
    • Add the steak and cook for 5-6 minutes until lightly browned.
  3. Add Garlic and Ginger:
    • Stir in the minced garlic and ginger, cooking for an additional 30 seconds until fragrant.
  4. Combine and Simmer:
    • Return the peppers to the pan with the steak.
    • In a small bowl, whisk together the soy sauce, sugar, cornstarch, and 1/4 cup of water.
    • Pour the sauce mixture into the pan with the steak and peppers.
    • Bring to a simmer, cooking for 2-3 minutes until the sauce thickens slightly.
  5. Serve:
    • Serve the pepper steak stir fry immediately, and enjoy!
