Ingredients

  • 1 tablespoon olive oil
  • 2 garlic cloves, minced
  • 2 medium zucchini
  • 2 tablespoons grated parmesan
  • Kosher salt and ground black pepper, to taste

Instructions

  1. Trim off the ends of the zucchini. Secure each zucchini in a spiralizer and turn it to create long zucchini noodles.
  2. Place a large pan over medium heat and add the olive oil. Once warm, add the minced garlic and cook briefly for about 30 seconds, just until fragrant.
  3. Add the zucchini noodles to the pan and toss gently for one minute, allowing them to heat through without softening too much. Turn off the heat.
  4. Add the grated parmesan, season with salt and pepper, and toss once more to evenly coat the noodles. Serve immediately.
