Ingredients:

  • 10.5 oz cream of chicken soup with herbs
  • 1 cup sour cream
  • 1 tablespoon Italian seasoning
  • 3 cups cooked, shredded or diced chicken
  • 2 sleeves Ritz crackers, crushed
  • ½ cup butter, melted
 

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F.
    • Lightly grease a 2-quart (or 8-inch) baking dish with non-stick cooking spray.
  2. Prepare the Chicken Mixture:
    • In a large mixing bowl, combine the cream of chicken soup, sour cream, and Italian seasoning.
    • Stir in the chicken until well-mixed.
  3. Assemble the Casserole:
    • Transfer the chicken mixture to the prepared casserole dish.
  4. Add the Topping:
    • Sprinkle the crushed Ritz crackers evenly over the top.
    • Drizzle with the melted butter.
  5. Bake:
    • Bake uncovered for 25–30 minutes, or until the crackers are golden brown and the center is hot and bubbly.

Notes:

  • You can substitute Cream of Mushroom Soup or regular Cream of Chicken Soup if desired.
  • While Ritz crackers are recommended, you can also use 1 cup of regular breadcrumbs or panko breadcrumbs.
  • For a more balanced meal, consider adding 1–2 cups of broccoli florets, peas, or mixed vegetables to the casserole.
