Roasting asparagus is an incredibly simple yet delicious way to prepare this vegetable, and it’s far more flavorful than steaming or blanching! All you need is salt, pepper, and olive oil, but adding garlic takes it to the next level.
1 garlic clove, finely minced (use a knife or garlic press)
Optional Finish:
2 tbsp lemon juice
2 tbsp parmesan, freshly grated
Instructions:
Preheat your oven to 220°C (430°F) or 200°C (fan-forced).
Snap off the woody ends of the asparagus. The asparagus will naturally break at the right spot.
Arrange the asparagus on a baking tray. Drizzle with olive oil and sprinkle with salt, pepper, and garlic. Toss to coat, then spread the asparagus out in an even layer.
Roast for 7 minutes, or until the tips are slightly browned and the asparagus is tender. For thicker spears, it may take 10-12 minutes. Be careful not to overcook them, as they’ll become limp.
Remove from the oven and toss with lemon juice (if using).
Transfer to a serving platter and top with freshly grated parmesan, if desired. Serve and enjoy!
