Roasted Asparagus
Ingredients:
- 500g (1 lb) asparagus (about 3 standard bunches)
- 1 1/2 tbsp extra virgin olive oil
- 1/4 tsp each salt and pepper
- 1 garlic clove, finely minced (use a knife or garlic press)
- 2 tbsp lemon juice
- 2 tbsp parmesan, freshly grated
Instructions:
- Preheat your oven to 220°C (430°F) or 200°C (fan-forced).
- Snap off the woody ends of the asparagus. The asparagus will naturally break at the right spot.
- Arrange the asparagus on a baking tray. Drizzle with olive oil and sprinkle with salt, pepper, and garlic. Toss to coat, then spread the asparagus out in an even layer.
- Roast for 7 minutes, or until the tips are slightly browned and the asparagus is tender. For thicker spears, it may take 10-12 minutes. Be careful not to overcook them, as they’ll become limp.
- Remove from the oven and toss with lemon juice (if using).
- Transfer to a serving platter and top with freshly grated parmesan, if desired. Serve and enjoy!

- Can I use frozen asparagus instead of fresh?
Fresh asparagus is preferred for the best texture, but you can use frozen if necessary. Just be sure to thaw it out first and pat it dry before roasting to avoid sogginess!
