Ingredients:

  • 1 butternut squash, peeled, seeds removed, and cubed
  • Extra-virgin olive oil (for drizzling)
  • Sea salt and freshly ground black pepper (to taste)
  • Chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Place the cubed butternut squash on the baking sheet. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Toss everything together to evenly coat the squash.
  4. Roast in the oven for 30 to 35 minutes, or until the squash is golden brown and tender when pierced with a fork.
  5. Optionally, garnish with chopped fresh parsley before serving.
