Ingredients:

For Cajun Seasoning:
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon dried oregano
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon dried thyme
For Shrimp:
  • 2 pounds extra large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • ½ cup butter, cubed and at room temperature
  • 2 tablespoons minced fresh parsley (optional)
  • 6 lemon wedges (optional)

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, combine the smoked paprika, garlic powder, onion powder, salt, oregano, black pepper, cayenne pepper, and thyme to make the Cajun seasoning.
  3. Pat the shrimp dry and place them in a large bowl. Add the Cajun seasoning mix and drizzle with olive oil. Toss the shrimp to coat evenly.
  4. Arrange the shrimp in a single layer on a sheet pan, ensuring they aren't overcrowded.
  5. Bake in the preheated oven for about 8 minutes, or until the shrimp are opaque in the center.
  6. As soon as the shrimp are done, add the butter to the hot pan and toss until melted and combined with the shrimp.
  7. Optionally, sprinkle with fresh parsley and serve with lemon wedges.
 
Serving Suggestions:
  • Serve the shrimp with rice, grits, or buttered noodles, drizzling the pan sauce over the top.
  • Enjoy as an appetizer or a main dish.
