Ingredients

  • 2 lb hot breakfast sausage
  • 1 (30–32 oz) bag frozen tater tots
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 1½ cups shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 8 large eggs
  • 2 cups milk

Instructions

  1. Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Cook the Sausage
In a large skillet, cook the sausage over medium heat until browned and no longer pink. Drain off any excess fat.
  3. Assemble the Casserole
In a large mixing bowl, combine the tater tots, cooked sausage, cheddar cheese, and mozzarella cheese. Spread the mixture evenly into the prepared baking dish.
  4. Make the Egg Mixture
In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well blended. Pour this mixture evenly over the tater tot mixture.
  5. Bake or Refrigerate
    • If baking immediately, leave uncovered and bake for 60–70 minutes, or until the eggs are set and the top is golden brown.
    • If preparing ahead, cover tightly and refrigerate overnight or freeze for later (see notes).

Make-Ahead & Storage Tips

  • To Refrigerate: Prepare up to one day in advance. Cover and refrigerate. Add a few extra minutes to the baking time if baking cold.
  • To Freeze (Unbaked): Assemble the casserole, cover tightly, and freeze. Thaw completely in the refrigerator before baking as directed.
  • To Freeze (Baked): Cool completely, then wrap and freeze. Thaw overnight in the fridge. Reheat covered with foil at 350°F for 30–40 minutes, until heated through.
