A delicious, make-ahead breakfast casserole loaded with sausage, cheese, tater tots, and eggs. Perfect for breakfast, brunch, or even dinner. Easy to assemble, easy to love!
Preheat the Oven Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray.
Cook the Sausage In a large skillet, cook the sausage over medium heat until browned and no longer pink. Drain off any excess fat.
Assemble the Casserole In a large mixing bowl, combine the tater tots, cooked sausage, cheddar cheese, and mozzarella cheese. Spread the mixture evenly into the prepared baking dish.
Make the Egg Mixture In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well blended. Pour this mixture evenly over the tater tot mixture.
Bake or Refrigerate
If baking immediately, leave uncovered and bake for 60–70 minutes, or until the eggs are set and the top is golden brown.
If preparing ahead, cover tightly and refrigerate overnight or freeze for later (see notes).
Make-Ahead & Storage Tips
To Refrigerate: Prepare up to one day in advance. Cover and refrigerate. Add a few extra minutes to the baking time if baking cold.
To Freeze (Unbaked): Assemble the casserole, cover tightly, and freeze. Thaw completely in the refrigerator before baking as directed.
To Freeze (Baked): Cool completely, then wrap and freeze. Thaw overnight in the fridge. Reheat covered with foil at 350°F for 30–40 minutes, until heated through.
