For the Casserole
- Hot Breakfast Sausage – adds rich, savory flavor and just the right touch of spice. You can use mild sausage if you prefer it less spicy.
- Frozen Tater Tots – the crispy, golden base that makes this casserole irresistible. No need to thaw — just toss them in straight from the freezer.
- Cheddar Cheese – melts beautifully for that classic, gooey comfort-food texture.
- Mozzarella Cheese – adds a little extra stretch and creaminess to every bite.
- Eggs – hold everything together while giving the casserole its light, custardy texture.
- Milk – makes the egg mixture smooth and creamy; whole milk gives the best richness.
For the Seasoning
- Salt & Black Pepper – simple, essential seasonings to balance and enhance all the flavors.
- Garlic Powder – adds subtle warmth and depth without overpowering the dish.
- Onion Powder – complements the sausage and cheese for that savory, homestyle flavor.
Optional Add-Ins
- Chopped Green Onions – sprinkle on top for a pop of color and freshness.
- Bell Peppers or Spinach – mix in before baking for extra flavor and veggies.
- Hot Sauce or Crushed Red Pepper – if you want to give it a little kick.

Tater Tot Sausage Breakfast Casserole
Ingredients
- 2 lb hot breakfast sausage
- 1 (30–32 oz) bag frozen tater tots
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp onion powder
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 8 large eggs
- 2 cups milk
Instructions
- Preheat the Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray. - Cook the Sausage
In a large skillet, cook the sausage over medium heat until browned and no longer pink. Drain off any excess fat. - Assemble the Casserole
In a large mixing bowl, combine the tater tots, cooked sausage, cheddar cheese, and mozzarella cheese. Spread the mixture evenly into the prepared baking dish. - Make the Egg Mixture
In a separate bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well blended. Pour this mixture evenly over the tater tot mixture. - Bake or Refrigerate
- If baking immediately, leave uncovered and bake for 60–70 minutes, or until the eggs are set and the top is golden brown.
- If preparing ahead, cover tightly and refrigerate overnight or freeze for later (see notes).
Make-Ahead & Storage Tips
- To Refrigerate: Prepare up to one day in advance. Cover and refrigerate. Add a few extra minutes to the baking time if baking cold.
- To Freeze (Unbaked): Assemble the casserole, cover tightly, and freeze. Thaw completely in the refrigerator before baking as directed.
- To Freeze (Baked): Cool completely, then wrap and freeze. Thaw overnight in the fridge. Reheat covered with foil at 350°F for 30–40 minutes, until heated through.
- Great for meal prep — works just as well for lunch or dinner!
- Customize with different cheeses, veggies, or sausage types.

1. Can I use mild sausage instead of hot?
Of course you can! Use what you love — spicy, mild, or even maple sausage if you’re into sweet-savory combos. The beauty of this recipe is that it works with whatever you’ve got.
2. Do I need to thaw the tater tots first?
Nope. Straight from the freezer and into the dish they go! They’ll crisp up beautifully in the oven. If you’re a crispy-top fanatic, you can give them a quick 10-minute bake first, but it’s absolutely not required.
3. Can I make this ahead of time?
Yes! This is one of those glorious make-ahead breakfasts that saves your sanity on busy mornings.
Assemble the whole thing, cover, and refrigerate overnight. Pop it in the oven the next day and bake as directed — just add 5-10 minutes since it’s starting cold.
4. How do I know when it’s done?
The eggs should be set in the center (no jiggly bits!) and the top will be golden and slightly puffed.
If you give it a gentle shake and it looks firm, you’re good to go.
5. Can I add veggies or swap the cheese?
Absolutely. Toss in diced bell peppers, spinach, or onions if you want to sneak in some color.
Cheddar and mozzarella are the classics, but Monterey Jack, Colby, or even pepper jack all work brilliantly. Make it your own — that’s the fun part!
