Ingredients

For the Chicken Burgers
  • 1 ½ lb ground chicken meat (thighs recommended)
  • 2 scallions, chopped
  • 1 cup shredded cheese (Cheddar, Gouda, or provolone)
  • ¼ cup mayo
  • ½ tsp salt
  • ½ tsp pepper
For the Avocado Corn Salsa
  • 1 large avocado, sliced
  • 1 ear fresh corn, husks and silks removed
  • ⅛ cup chopped fresh cilantro
  • ½ tbsp olive oil
  • Salt and pepper, to taste
  • ½ lime, juiced

Instructions

Chicken Burgers
  1. Add the ground chicken to a medium bowl. Stir in the shredded cheese, scallions, mayo, salt, and pepper until the mixture is evenly combined.
  2. Scoop out portions of the mixture using a ½-cup measure and gently shape them into patties.
  3. Grill the patties on an outdoor grill or grill pan for about 5 minutes per side, or until they are fully cooked.
  4. While the burgers cook, prepare the salsa.
Avocado Corn Salsa
  1. Cut the kernels from the ear of corn using a sharp knife.
  2. Place the corn, sliced avocado, and cilantro into a medium bowl. Add the olive oil and lime juice, season with salt and pepper, and toss gently to combine.
  3. Spoon the salsa over the cooked chicken burgers when serving.
